We had these for breakfast. They are yummy and freeze well for mornings when you want something to pop in the toaster oven for a quick and easy meal.
Waffles
1 egg
1 cup flour
1/4 cup vegetable oil
1 cup milk
1 tbsp brown sugar
2 tsp baking powder
1/4 tsp salt
Separate egg, putting egg white into medium sized bowl. In large bowl, combine egg yolk and all other ingredients. Whisk together until just mixed. Beat egg white with a fork until soft peaks form, then fold egg white into the mixture in the other bowl. Cook in waffle iron. (This recipe makes four waffles -- 4 squares each -- in our waffle iron, which serves the three of us. I usually double it so that we have extras to freeze.)
