I just took a batch of these muffins out of the oven -- they smell
so good.
Lemon Muffins. I used blueberries instead of raspberries because I had them in the freezer. I have to say that I think the recipe is missing an ingredient, because what I got once everything was mixed together (before I stirred in the blueberries) was a very thick dough, not muffin batter. I had to mix in the rest of the fresh lemon juice I had as well as some soy milk before I got something resembling muffin batter.
I've also recently (in the past couple of weeks) made
Lemon Poppy Seed Scones -- fine, though turns out I'm not a huge poppy seed fan --
Orange Poppy Seed Scones, and
Cherry Chocolate Chip Scones in which I had to use "cherry flavored" dried cranberries instead of the cherries because I couldn't find dried cherries at the store. The cherry chocolate chip ones were the yummiest.
