So if I wanted to make this recipe this morning, but stop after I put everything in the pot and refrigerate it for the day, then put it in the oven when I get home this afternoon, there's no reason that wouldn't work, right?

I do it all the time with my crock pot. Depending on the pot, you might need to be careful with how fast you heat the thing, but that's all I can think of that might be a problem.

It's a good sturdy metal pot, but yes, I'll put it into the oven cold and then turn the oven on and let it all heat up together. Thanks!

Shouldn't be a problem. One thing is important with pot roast beef - and that's not using too much heat. Beef needs to simmer, not bubble, otherwise it gets tough.
