York Peppermint Patty Brownies

Just posting this so I don't lose track of the recipe. I haven't made them in a long time. They are so rich and delicious (I mean, seriously -- 3 sticks of butter? 3 cups of sugar? 5 eggs?) and the fact that they're pepperminty makes them seem like a winter holiday thing to me.
1 1/2 c. (3 sticks) butter, melted
3 c. sugar
1 tbsp. vanilla
5 eggs
2 c. flour
1 c. Hershey's cocoa
1 tsp. baking powder
1 tsp. salt
24 sm. York Peppermint Patties, unwrapped
Heat oven to 350 degrees. Grease 13"x9"x2" baking pan.
In large bowl stir together butter, sugar and vanilla. Add eggs; stir until well blended. Stir in flour, cocoa, baking powder and salt; blend well. Reserve 2 cups batter; set aside. Spread remaining batter in pan. Arrange peppermint patties in single layer over batter, about 1/2" apart. Spread reserved batter over patties. Bake 50 to 55 minutes or until brownies begin to pull away from sides of pan. Cool in pan on wire rack; cut into squares. About 36 brownies.

Date: 2005-12-21 02:20 pm (UTC)I can't see the recipe as I type, so maybe I just missed it, does it specify large or small peppermint patties? My pharmacy sells some mini ones, that may or may not be York, but are pretty good, and I can imagine decorating with them, still wrapped, unbaked, somehow.
