Recipe - Rice Lentil Polou

I got this recipe from Laurel's Kitchen, but changed it a bit to suit my tastes and desire for a greater ratio of protein to grain. It's vegan and very yummy.
Rice Lentil Polou
1 tbsp oil
1 medium onion
1 cup raw brown rice
1/2 cup raw lentils
1 tbsp tomato paste
1/4 tsp cinnamon
3 cups vegetable broth
1/2 cup raisins
1/2 cup sliced almonds
1/4 tsp salt
Saute diced onion in oil until soft. Add rice and stir for a minute or two. Add lentils, tomato paste, broth and cinnamon. Bring to boil; cover tightly, turn heat very low, and simmer for 30
minutes. Preheat oven to 350 degrees.
Mix in raisins, almonds and salt. Mixture should still have a little liquid in it; if not, add 1/4 cup. Place in greased baking dish. Cover and bake for 20 to 30 minutes.
We had this with maple-glazed carrots and Bountiful Beer Bread from Tastefully Simple. I made the bread with a bottle of Sam Adams' Octoberfest and it's awesome. (I wouldn't pay $5 for a box of bread mix, by the way. My mom bought it at one of those home parties, but she doesn't really do much in the way of cooking, so she gave it to me. Who am I to argue?)
