Two bottles of red food coloring and then it's like when you drink grape pop/soda and suddenly your poo is infant nuclear green and you don't realize why and have a health scare for about an hour.

You can always omit the food coloring if it makes you uncomfortable. It doesn't change the flavor, it just won't be red.

my red velvet cake likewise calls for two bottles of food coloring. mostly it makes your cake BRIGHT FUCKING RED. which i think is totally worth it, especially if you split the cake among like twenty people.
