Crystallized ginger is a must in molasses ccokies IMO.

Oatmeal cookies can't be overbaked or they get tough. I always go for the lower end of the cooking time and check early. Also, I add a bit of milk to the batter so it's got some extra moisture, because I always use the old-fashioned (chewier) oats instead of the finer instant oatmeal, never mind what the recipe calls for.
