Banana bread

This is the recipe I've been using most often.

Grandma Cookhill’s Three Bowl Bread.

Banana Bread

1/3 cup softened butter
2/3 cup sugar
1 egg
1 3/4 cup flour
1 1/2 tsp baking powder
1/4 tsp baking soda
1 tsp cinnamon
3 very ripe bananas

In a large bowl, cream together butter and sugar. Mix in egg.

In another bowl, sift together flour, baking powder, baking soda, and cinnamon. Mash bananas. Alternately, add flour mixture and banana mixture to the butter-sugar-egg bowl. Stir until well mixed. Pour into 8 by 4 bread pan and bake at 350 degrees for one hour.

I've just experimented with tweaking the recipe -- last time I substituted 3/4 cup whole wheat flour for part of the total flour and it didn't rise as well, so this time I added a teeny bit more baking powder and 6 tbsp of cream (normally I'd use rice milk but we had the cream left over from another recipe and we won't use it for anything else, so I didn't want it to go to waste) because I thought the batter was a little too thick.

Hey, at least you can't smell it! :-)

It's good! And not too many ingredients, which I always appreciate. :-)

Mmm. And I've just decided I need to learn to bake.... (And bananas were on sale this week, so we will probably have overripe bananas by the weekend.)

Banana bread is one of those things you can tell yourself is sort of healthy, too. LOL!

Excellent, and perfect timing, since I had a bunch of bananas lying around that were about to give up the ghost.

I added a touch of cloves (because, let's face it, I'm a cloves addict and put them in everything), and it seems to have blended in well.
