Chocolate Chip-Banana Muffins

Chocolate Chip-Banana Muffins

Ingredients:
1/2 cup butter or margarine (preferably unsalted)
1 cup granulated sugar
2 eggs
1 1/2 cups mashed bananas (3 to 4 medium-large bananas)
1 tbsp. lemon juice + 1/3 cup yogurt
2 cups all purpose flour
1 tsp. baking soda
1/2 tsp. salt
1/2 tsp. ground cinnamon
1/3 cup mini chocolate chips

Preheat oven to 350 degrees F (180 C).

Cream together butter and sugar until light and fluffy. Beat in eggs, one at a time. Stir in mashed bananas, lemon juice, and yogurt. Mix together flour, soda, salt and cinnamon. Blend into creamed mixture. Stir in chocolate chips. Spoon into 24 muffin cups. Bake for 15 to 20 minutes. Let cool in pan for 5 minutes.

Makes about 24 muffins.

Sooooo good, and really easy. Plus I got to use up our over-ripe bananas. I sprinkled a little bit of cinnamon-sugar on top and used jumbo muffin pans so I had to bake them longer, but they're super delicious.

Those sound heavenly! Now if only I could figure out how to count the calories and fat in that...

Probably a lot, although less than some muffin recipes because only one stick of butter and comparatively a lot of banana. (I think I used closer to 2 cups of mashed banana.) You could easily leave out the choc chips or substitute something healthier for them (craisins?) That wouldn't lower the fat by much but there'd be less processed sugar.
