I'm super into pork right now, I have no idea why, but I totally think you could replace the pork in this recipe with chicken or beef and it would be really similar.

Tonight, we had this most amazingly delicious soup for dinner.

Crockpot Chicken Tortilla Soup.

It contains more canned ingredients than I prefer, BUT sometimes it's nice to have a fairly simple recipe as far as prep goes, and it was super good. We loved it. I used mild enchilada sauce and it was very flavorful without being too spicy. (I also only used 2 of the 3 cans of chicken broth, because I could only fit that much in my crock pot, which is maybe somewhat small?) I like that the recipe could easily be doubled while using the same amount of meat but 2-3 times the beans, making it affordable and good for a crowd. We had it with a sprinkle of low-fat cheese and a handful of whole grain tortilla chips on the side, and next time I might try fresh avocado.

I willingly admit that this was a totally made-up recipe, loosely based on Alton Brown's homemade granola recipe (courtesy of [ profile] justhuman) and then tweaked to my heart's content. It's not the only granola I'm going to make, though, so if the end result is less than perfect it's my own fault. I promise not to blame Alton. Or JH.

If you like granola, do you have a favorite way to eat it? I like it sprinkled on top of yogurt, or with a container of yogurt blobbed onto the top of it.

This is a recipe for Butternut Squash Soup courtesy of my friend M! It's very easy and amazingly delicious, and although it contains bacon as written it is super-simple to convert to vegetarian.

I'm starting to consider going vegetarian again. I think I just have to psyche myself into it, as well as finishing up the small amount of meat we have in the house and reminding myself of the many, many meals I used to make when we didn't eat any meat at all.

Recipes I want to try -
Banana, honey and peanut butter "ice cream"
Mary Ostyn's Maple Morning Polenta
Gingersnap Oatmeal
Pumpkin Turkey Chili (easy enough to swap veggie crumble or beans for the chili)
Light Banana Bread (love that this recipe uses real food)
Broccoli, Parmesan and Lemon

Also, must remember Post Punk Kitchen for really good-sounding vegan recipes.

I really, really want to make this cheesecake, it looks AMAZING.

Coffee Cookie Dough Fudge Cheesecake.

I mean, seriously? How good does that look? I want it RIGHT NOW. Of course, I've never actually made a cheesecake, especially the kind that requires a springform pan, so it's totally intimidating, and really I'd need a special occasion for which to make it. But I'm CRAVING it.

Yes, this is my Sunday morning. Welcome to it. :-)

I just took a batch of these muffins out of the oven -- they smell so good. Lemon Muffins. I used blueberries instead of raspberries because I had them in the freezer. I have to say that I think the recipe is missing an ingredient, because what I got once everything was mixed together (before I stirred in the blueberries) was a very thick dough, not muffin batter. I had to mix in the rest of the fresh lemon juice I had as well as some soy milk before I got something resembling muffin batter.

I've also recently (in the past couple of weeks) made Lemon Poppy Seed Scones -- fine, though turns out I'm not a huge poppy seed fan -- Orange Poppy Seed Scones, and Cherry Chocolate Chip Scones in which I had to use "cherry flavored" dried cranberries instead of the cherries because I couldn't find dried cherries at the store. The cherry chocolate chip ones were the yummiest.

I want to try a new recipe, and I'm trying to decide between these -- I'm also happy to entertain other suggestions if anyone has any!

World Peace Cookies. I would probably add something other than just chocolate pieces to them, and am considering butterscotch.

Glazed Lemon Bread

I did make these Cinnamon Roll cookies a few days ago and they were great - the icing really made them special, although it was also kind of messy and therefore they aren't really the ideal cookie for a holiday cookie basket or whatever.
